Freezing buns, and reheating them properly
A frozen bun reheated well is better than a fresh bun eaten two days late. Most people defrost when they should not.

We tell people to freeze buns all the time and then watch them ruin the reheating, so here is the whole thing in one place. The short version is freeze early, reheat from frozen, and never use the fridge.
Freeze them on the day
A bun starts going stale within hours, and freezing does not undo staling, it only pauses it. So freeze on the day you buy them, not on day three when they have already turned. Let them cool completely first, because trapped warmth becomes ice crystals and ice crystals become a soggy bun.
Wrap each one individually, then bag them. Two wraps sounds fussy and is the difference between a month and a week of decent quality.
Baked buns, from frozen
Do not defrost. Wrap the frozen bun loosely in foil, put it into an oven at one hundred and sixty degrees, and give it twelve to fourteen minutes. Open the foil for the last two if you want the top back. A defrosted bun reheated the same way comes out damp, every time.
Steamed buns, from frozen
Straight into the steamer, still frozen, eight to ten minutes. They come back almost exactly as they were, which is the nicest thing about the steamed buns. If you have no steamer, a plate, a splash of water, a damp cloth over the top and forty five seconds in a microwave is genuinely fine.
Bread is different
Slice a loaf before you freeze it, so you can take two pieces rather than committing to the whole thing. Frozen slices go straight in the toaster on a low setting.
To bring a whole loaf back, hold it briefly under a running tap, shake it off, and put it into a hot oven at two hundred degrees for eight to ten minutes. It sounds wrong and it works. You get one go at this per loaf, so eat it that day.
Never the fridge
Bread goes stale several times faster at fridge temperature than at room temperature. The fridge is the worst place in your kitchen for a loaf. Bread bin, or freezer, and nothing in between.
