These are the buns the bakery started with, and they are still the thing we make most of. The dough is enriched with milk, butter and egg, mixed the afternoon before and left cold overnight, which is what makes it soft rather than fluffy.

Fillings are cooked here, in the same kitchen, usually a day ahead so they have time to firm up. A wet filling tears a bun open in the oven, so we cook things down further than most recipes tell you to. There is a whole note on folding a bun if you want to know how we close them.

Everything below is baked in one go first thing, and again around eleven if the morning has been busy. When a filling runs out, it is out for the day.

  • Cheese and onion bun

    £3.20

    Onions cooked down slowly for about an hour, mature cheddar, and a small spoon of English mustard. The one we make the most of, by a long way.

  • Curried potato and pea

    £3.00

    Potato, peas and onion in a mild curry paste we make on Mondays. Warm rather than hot.

  • Braised beef and black pepper

    £4.20

    Chuck braised for three hours with onion and stock, then finished with more cracked pepper than seems sensible. Rich, and a bit messy to eat standing up.

  • Chicken and leek

    £3.90

    Thigh meat, leeks softened in butter, a little thyme. Mild enough for children who are suspicious of everything.

  • Mushroom and thyme

    £3.60

    Chestnut mushrooms browned hard so they do not go watery, with garlic and thyme. Made on a separate dough with no dairy or egg.

  • Smoked ham and cheddar

    Ham from a shoulder we cook here, cheddar, and a thin scrape of mustard butter.

  • Spinach, feta and dill

    £3.60

    Spinach wilted and then squeezed properly dry, feta, dill and lemon zest. Salty, which is the point of it.

  • Red bean bun

    Adzuki beans cooked down with sugar until the paste holds its shape. Sweet, but not very sweet.

  • Custard bun

    A set custard made with whole milk and egg yolks, piped in after baking so it stays loose.

  • Apple and cinnamon

    £2.90

    Bramleys cooked to a rough puree with cinnamon and a little brown sugar. On the counter from September until the apples run out.

  • Chilli paneer

    Paneer fried until it takes some colour, with peppers, chilli and ginger. The hottest thing we sell, which is not saying a great deal.

    Coarse pork sausage meat with fennel seed and a splash of white wine.

Prices are what you pay at the counter. Allergen lists are kept current here, and we will always talk you through anything you are unsure about.

What goes first

Cheese and onion goes first, most days before eleven. Braised beef usually follows it by about one. If you want either in the afternoon, ask us in the morning and we will put one by with your name on it.
