This is the baked side of the counter. The dough has milk, butter and egg in it, which makes it slower and stickier to work with than a plain bread dough, and much softer once it is baked. It is the dough behind most of the filled buns we sell.
How the afternoon goes
You mix and knead the dough first, then leave it while you cook two fillings, a cheese and onion and a vegetable one. Cooking the fillings properly is most of the class. A wet filling will open a bun in the oven every time, and knowing when a filling is dry enough is a thing you learn by looking at it, not by timing it.
Then you shape, fill and seal, prove, glaze and bake, and eat two of them before you leave. We cover the seam in detail, and there is a written note on folding a bun you can take away.
What you should know before booking
Because the dough is enriched with butter, it takes longer to knead and it will stick to you for the first ten minutes. That is normal. If you have only ever kneaded a plain bread dough, read kneading by hand beforehand.
There is wheat, milk and egg all over this class and no way around it. If you would rather work without dairy or egg, An Introduction to Steamed Buns is the better booking.

Booking and changes
Paid in full when you book. Seven days notice to move or cancel with a full refund. Inside seven days we will try to fill the place and refund you if we do. If we cancel, you get everything back.
The other three classes
Before you come
One flight of stairs, no lift, and you will be standing for most of it. Wheat, milk, egg, soya, sesame and peanuts are all in the room. Aprons and boxes are provided. Tell us about anything else when you book and we will work around it.
